Notice the last column: 3 sheets of any grade all substitute for the same 1 envelope (≈7g) of powder by count — even though their actual weight ranges from ≈5.1g to ≈15.0g. That's the 1:1-by-count rule in action.

Sheet (leaf) gelatin is sold in several strength grades — Titanium, Bronze, Silver, Gold and Platinum — ranked by their bloom rating, a lab measurement of gel firmness. Confusingly, a higher bloom rating means a lighter individual sheet: Titanium (the lowest bloom, 100–120) is cut into the heaviest sheets at about 5.0g each, while Platinum (the highest bloom, 230–250) is cut into the lightest sheets at about 1.7g each. Manufacturers deliberately size each sheet so that, whatever the grade, one sheet sets roughly the same amount of liquid to roughly the same firmness. That's why recipes call for gelatin sheets by count (“4 sheets of gelatin”) rather than by weight — the count is the whole point of the grading system, and it's designed to make grades interchangeable 1:1 without you doing any math.
The mistake this page exists to prevent: if a recipe says “4 gold sheets” and you only have platinum, use 4 platinum sheets — not the weight of 4 gold sheets' worth of platinum (which would be far too little gelatin, since platinum sheets are so much lighter). Weighing sheet gelatin only matters if you're trying to figure out how many sheets you're holding, or comparing it against a powder measurement.
Converting powdered gelatin to sheets is a different, simpler rule: one standard packet or tablespoon of powder (about 7g) is treated as equivalent to about 3 sheets of gelatin, and one teaspoon of powder to about 1 sheet — regardless of sheet grade, since this is a rough, traditional rule of thumb rather than a bloom-matched calculation. Some sources recommend using up to 4 sheets per envelope when substituting for a lower-bloom grade like Titanium or Bronze, since more of the (individually weaker) sheets are needed to match a powder's setting power. Treat 3 sheets per envelope as the reliable baseline and 4 as the upper end of the range you might see in older or brand-specific recipes.
Powdered gelatin has its own bloom-strength variation worth knowing about: Knox and most other US supermarket brands are formulated to roughly 225 bloom, generic US grocery-store gelatin tends to run closer to 215, and European powdered gelatin is typically formulated to about 200 bloom — the same strength as gold-grade sheets. That's part of why a European recipe that just says “gelatin” with a weight and no grade specified is usually safe to treat as gold-equivalent, whether it means sheets or powder.
Blooming (softening gelatin in cold liquid before dissolving it) uses its own ratio for powder: about 1 part powdered gelatin to 5 parts cold water by weight, then let it sit for 5–10 minutes until fully absorbed before melting it into your recipe. Sheet gelatin is bloomed differently — submerged whole in a bowl of cold water until soft, with no fixed water ratio, since the sheets simply absorb what they need and any excess water is squeezed out and discarded before use.
