Why tamarind needs a ratio converter, not a fixed number

Tamarind reaches a recipe in three quite different forms, and each one is a different concentration of the same underlying fruit. Pulp, usually sold as a compressed block with seeds and fiber still inside, needs to be soaked in hot water, mashed, and strained before it's usable — the ratio of pulp to water you choose (anywhere from equal parts to twice as much water) directly controls how sour and concentrated the resulting tamarind water is. Paste is typically the same pulp pre-processed to remove the seeds and fiber, saving a step but still needing dilution. Concentrate is the most reduced, most intense form, often used with little or no added water at all.

The complication is that none of these categories are standardized between brands. A bottle labeled "tamarind concentrate" from one producer might be diluted enough to use almost like a paste, while another brand's concentrate is a thick, nearly pure reduction — a difference of up to three times in strength for products carrying the same name. That's why this converter works in ratios (1 part this, roughly 2 to 4 parts that) rather than claiming an exact gram-for-gram formula the way a converter for a manufactured, uniform ingredient can. Use the ratio as your starting point, then taste the dish and adjust — adding a little more tamarind for sourness, or a little more water/stock to mellow it, is completely normal even for experienced cooks.

If you're substituting one tamarind form for another mid-recipe — say, a recipe calls for tamarind pulp soaked in water but you only have concentrate — start with the smaller end of the suggested ratio and add more concentrate gradually, since it's much easier to add more sourness than to remove it.
