Honey and granulated sugar behave differently in a recipe for three separate reasons: honey is a liquid (roughly 17-20% water) where granulated sugar is a dry solid, honey is naturally acidic where sugar is neutral, and honey browns faster in the oven due to its fructose content. Substituting cup-for-cup ignores all three, which is why the common guidance is to use less honey than the sugar it replaces (about ¾ cup honey per 1 cup sugar, adjustable down to ½ cup for a milder sweetness) and then correct for the extra liquid, acidity and browning separately.
The liquid correction matters most in cakes, quick breads and cookies with another liquid ingredient (milk, water, juice) already in the recipe: cut that other liquid by about 3-4 tablespoons for every cup of honey you're using, so the batter's overall hydration stays close to what the recipe was developed for. If there's no other liquid to reduce — a cookie dough, for instance — add roughly 1 tablespoon of flour for every ¼ cup of honey used instead, to soak up the extra moisture honey brings.
Honey's natural acidity is mild but real, and it can throw off a recipe that relies on baking soda reacting with a specific acid already present. Adding about ¼ teaspoon of baking soda per cup of honey used helps neutralize that extra acidity and keeps the leavening balanced. Because honey also caramelizes and browns faster than sugar, lowering the oven temperature by about 25°F helps prevent over-browning or a burnt edge — though this substitution isn't recommended at all for recipes baked above 350°F, where honey's faster browning becomes harder to compensate for with a temperature drop alone.
